Nachos with bacon.



We had nachos on New Years Eve day while we watched some Dexter. There were some lime tortillas to finish so I used them as the base and some drained salsa (otherwise it makes things very soggy, Herdez was the variety of choice), sliced green onions, crispy bacon bits and cheddar cheese. We had a few rashers of bacon in the freezer which I had thawed earlier, diced and fried up till crispy. You can see that some of the tortillas blackened slightly, this is the lime flavouring bits catching, it was an interesting add to the dish having the lime underlying it all. I think you can totally make nachos with whatever you have in the fridge, olives, different cheeses, red onion, salami, I have been known to use avocado before (jury is still out on that one), already cooked mushrooms, the list goes on. I think the key is to make sure that all the 'chips' get some topping to them, instead of piling the toppings in the middle of the tray and having lots of empty 'chips' around the edge. If you don't overload it with cheese and use a low fat sour cream for dipping, it doesn't have to be a hugely sinful snack.
