Pita Pizza - cheap and easy and quick. (using up crushed tomatoes)

In my quest to finish the crushed tomatoes that were left over (still) we decided on making quick pizzas for lunches. We picked up some pita breads, large ones, from 'No Frills' which were really cheap actually and a few other simple ingredients, sliced salami, fresh basil, red onion and mozzarella. 

These are as easy as it gets. Put some sauce onto the pita then all the toppings that you want and into a hot oven for about 5mins until the cheese melts, voila! Lunch is served. It is also fun to do as everyone can make their own too, and you can use up whatever you have to use in the fridge. My husband is particularly good at the pita pizza making so I am always happy when he asks if I want to swop a slice! He tends to be more generous with toppings, and there is lashings of sauce, which keeps it from getting too crisp. You can also do one pizza and top half each. When using crushed tomatoes as your sauce instead of a proper seasoned sauce, you may want to add some garlic powder and Italian seasoning or even hot chilli flakes for some extra flavour. You can also use pesto as a base if you don't fancy the tomato variety, and just get creative! This is a fun option for kids to get involved in too. 



Crushed tomatoes finally used up! Hurray! And we were enjoying the pita pizzas so much that I actually had to by some more pizza sauce to continue the trend, until we ran out of pitas. Now it is all on hold. The solution is more pitas, seeing as we still have sauce and toppings available, so maybe in a few days time we will head back to these tasty treats.
